Sweet potato fries

Who doesn’t love fries? This version made of sweet potatoes is more nutritious than standard potato fries, which are often loaded with unhealthy fats. Sweet potato fries will turn out a bit softer than usual fries, but their delicious taste makes more than up for it.

Sweet potatoes are true “superfoods”. They can support the immune system and boost skin health. Unlike starchy potatoes their slow release carbohydrates can help maintaining steady blood sugar levels.

Goes well with: Garlic mayonnaise, Portobello burger, Lettuce wrapped burger, Veggie meatballs, Roasted salmon with green asparagus

Ingredients

  • 2 medium sized sweet potatoes
  • 3 tablespoons coconut oil (or olive oil)
  • salt to taste
  • pepper to taste

Method

  1. Preheat the oven to 200 degrees (hot air oven), wash sweet potatoes, don’t peel, cut first into slices, then into stripes
  2. Melt 3 tablespoons of coconut oil in a pan
  3. Place fries on a baking tray, drizzle with coconut oil and mix well using your hands. Sprinkle with salt and bake for 25 minutes, turning them once half way through the baking time
  4. Optional: Fry sweet potatoes in a frying pan on high heat, turning them regularly until golden brown
  5. Add salt and pepper to taste
