Roasted salmon with green asparagus

It’s asparagus time of year! Next to roasted salmon and covered in a delicious dressing, a truly healthy feast. Salmon is a great source of health supportive omega-3 fats. These can be beneficial for the heart and brain function and asparagus is rich in important vitamins and minerals.

Tip: for the salmon, I prefer oven to pan roasting, as the fish is less likely to fall apart and the kitchen does not end up so smelly.

Ingredients

  • 2 pieces fresh salmon
  • 400 g green asparagus
  • 2 lemons (1 for dressing)
  • olive oil for frying
  • salt to taste
  • pepper to taste

Voor dressing

  • 50 ml olive oil
  • Juice of 1 lemon
  • 1 handful fresh parsley
  • 1 clove garlic (pressed)
  • 1 teaspoon honey

Kitchen tools: grater, baking paper, blender

Method

  1. Preheat oven to 200 degrees (hot air oven)
  2. Wash asparagus and lemons, grate peel of 1 lemon and juice both, set aside
  3. Chop asparagus ends off (about 1-2 cm), place asparagus in pan, cover with water, add pinch of salt and let simmer on medium heat for about 15 minutes until tender
  4. Meanwhile place salmon pieces on baking sheet in oven dish (easier to clean afterwards as fish can be sticky)
  5. Drizzle juice of 1 lemon and some olive oil (not 50 ml) on salmon, sprinkle with salt and pepper, bake for 10-15 minutes
  6. Meanwhile prepare dressing: add 50 ml olive oil, juice of 1 lemon, garlic, parsley and honey to blender. Blend until smooth
  7. Serve salmon and asparagus with dressing on top and sprinkle with lemon peel
