Sardines on greens

Tinned sardines are one of my household staples. I even carry one in my handbag for emergencies. They are the perfect healthy last-minute-meal option. Combined with a few green leaves, onions and capers sardines make a very tasty salad.

Sardines are a great source of omega-3 fats, good for heart health and brain function. Also very tasty on a buckwheat pancake for extra substance.

Ingredients

  • 1 tin sardines (in tomato sauce or virgin olive oil, no additives)
  • 2 handfuls salad leaf mixture (or rocket salad)
  • 1 small red onion
  • 2 tablespoons capers
  • salt to taste
  • pepper to taste

For dressing:

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 teaspoon mustard

Method

  1. Wash salad leaves, cut onion
  2. Arrange salad leaves on plate or buckwheat pancake
  3. Open tin and add sardines to salad, sprinkle with onions and capers
  4. For the dressing: mix olive oil, lemon juice, honey and mustard using a fork
  5. Drizzle dressing on salad, add salt and pepper to taste
