Fig & feta salad

I love combining fruit with salad. This is another great summer salad. The sweetness of the figs goes really well with the saltiness of the feta cheese.

Not only extremely tasty but combining fruit sugar with vegetables can help keeping blood sugar levels in balance.

Goes well with: late summer

Ingredients

  • 4 figs
  • 100 g feta cheese
  • 100 g salad leaf mixture
  • 3 tablespoons pine nuts (roasted)
  • salt to taste
  • pepper to taste

For dressing:

  • 2 tablespoons olive oil
  • 1 tablespoons fresh lemon juice
  • 1 teaspoon honey
  • 1 teaspoon mustard

Method

  1. Roast pine nuts in pan until golden brown, set aside
  2. Wash figs and salad leafs
  3. Spread salad on 2 plates (or large platter)
  4. Cut figs in quarters (leave skin on) and place on salad
  5. Cut or crumble feta and sprinkle on salad
  6. For dressing: mix olive oil, lemon juice, honey and mustard
  7. Pour dressing on salad
  8. Add salt and pepper to taste
