Superfast wasabi-beetroot soup

A true ‘fast food’ soup. Simply blend precooked beetroot with wasabi and lemon juice, heat up and add cream. Also very tasty eaten cold.

Precooked packaged beetroot can be found in the vegetable section of the supermarket. Make sure it is additive-free. Beetroots are rich in antioxidants and can have a positive effect on the liver and blood circulation.

Goes well with: cold in summer, hot in winter, crunchy flaxseed crackers

Ingredients

  • 1 package precooked beetroot (about 400-500 g, additive free)
  • 1 tablespoon wasabi paste (or horseradish) add extra for more spice
  • Juice of 1 lemon
  • Half teaspoon salt
  • pepper to taste
  • 2 tablespoons pouring cream

Kitchen tools: food processor or blender

Method

  1. Cut beetroot in pieces
  2. Add all ingredients (apart from pouring cream) into blender and blend
  3. Pour soup into pan and bring to boil shortly
  4. Add some water to liquify if desired
  5. Pour into bowls and add cream on top
  6. Optional: serve cold
