Spinach wrap with cream cheese & raw vegetables

A great replacement for the less nutritious wraps made from wheat flour. You make a wrap from eggs, spinach and cheese. Then fill it with cream cheese, ham and raw vegetables. The result: a healthy wrap with a fresh bite.

Ingredients

Wraps

  • 8 eggs
  • salt & pepper
  • 100 g spinach
  • 100 g grated cheese

Filling

  • 100 g cream cheese
  • 8 slices of ham or 150 g smoked salmon
  • 1/2 pepper
  • 1/2 courgette
  • 1 handful of chives
  • salt & pepper

Kitchen tools:

  • baking paper & grater

Method

  1. Preheat the oven to 180 degrees. Line a baking tray with baking paper.
  2. Whisk the eggs with a pinch of salt and pepper in a bowl.
  3. Finely chop the spinach and add together with the cheese to the eggs. Mix everything together.
  4. Spread the egg mixture evenly over the baking tray (like a very thin omelette).
  5. Bake for 15 minutes in the oven. Remove from the oven and leave to cool.
  6. Cut the egg-spinach omelette into four equal pieces. These are the wraps. Spread cream cheese over the centre of each wrap and place two slices of ham on top.
  7. Cut the pepper into thin strips, grate the courgette and finely chop the chives, then divide among the four wraps.
  8. Sprinkle with salt and pepper and roll the wraps up one by one, pressing firmly.
