Rocket & feta wrap

Rocket & feta wrap

When a salad is just not enough. I use buckwheat pancakes as salad wraps. These add a bit more substance to the meal and are a good alternative to conventional wraps or bread. I always make sure I have a ready-made batch in my fridge for quick meals.

Goes well with: lunch, dinner

Ingredients

  • 100 g feta cheese
  • 50 g rocket salad
  • 1 tomato or 1 handful of cherry tomatoes
  • 50 g pine nuts
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Pinch of salt
  • Pinch of pepper

Method

  1. Wash rocket salad and tomatoes
  2. Prepare buckwheat pancakes and leave to cool down
  3. Cut feta and tomatoes in small pieces
  4. In a pan, roast pine nuts on medium heat, turning them frequently to prevent burning, set aside
  5. In bowl mix rocket salad, tomatoes, olive oil, balsamic vinegar, salt and pepper
  6. Add feta and pine nuts and gently continue mixing
  7. Put salad mixture on one side of pancake and fold other half to create wrap effect or leave open and let salad tower on top
