Quinoa sushi
Print recipeOrdering sushi is easy enough, but so is making it yourself! It's simpler than you think. You just need to slice the ingredients into thin strips and cook the quinoa. Then you top the nori sheets and roll the sushi into their familiar shape.
Instead of rice, I use quinoa — a healthy alternative packed with good nutrients. Quinoa cooks quickly and in this recipe you season it with tamari, honey and wasabi. You can of course put together your own sushi filling.
Ingredients
- 300 g quinoa
- 1 mango
- 1 ripe avocado
- 1 red pepper
- 1 carrot
- Half a cucumber
- 200 g smoked salmon
- 1 teaspoon wasabi paste
- 3 tablespoons tamari
- 1 tablespoon vinegar
- 2 tablespoons honey
- 8 nori sheets

Method
- Rinse the quinoa and follow the cooking instructions on the packaging.
- Cut the mango, avocado, pepper, carrot, cucumber and salmon (or your chosen filling) into long, thin strips. Arrange everything on a plate and have it within easy reach for when you start rolling the sushi.
- Mix the wasabi, tamari, vinegar and honey in a bowl. Add the cooked quinoa and stir well. The dressing helps the quinoa stick together better. Leave the quinoa to cool for 10 minutes, stirring occasionally.
