Peanut butter ice cream
Print recipeA homemade, healthy and fast alternative to store-bought ice cream. Frozen bananas are the basis for this peanut butter ice cream. It is creamy, sweet, full of flavour and does not contain any added sugar.
Best to freeze bananas overnight, blending the ice cream just takes a few minutes.

- 3 ripe bananas (frozen, in pieces)
- 2-3 tablespoons peanut butter
- 4 tablespoons coconut milk (or other milk)
- 1 small handful of peanuts
- Optional: maple syrup to drizzle
Kitchen tools: strong food processor
Method
- Cut ripe bananas in pieces, place in airtight container or plastic bag and freeze for a few hours or overnight
- Take bananas out of freezer 5 minutes before use (makes it easier to process them)
- Add frozen bananas to food processor and pulse
- Add coconut milk and peanut butter, continue blending
- Use spatula to push mixture down, as it will stick to jug. Repeat a few times
- Blend until creamy
- Serve in bowl, drizzled with peanuts and maple syrup (optional)
