Chicken soup

My favourite soup! Warming, delicious and healing. Can fight colds and can boost the immune system.

When my kids are ill or unwell this is the dish I serve them. The combination of fresh chicken broth with vegetables and immunity boosting garlic helps them to feel better and recover.

Goes well with: flues, cold days, comfort eating

Ingredients

  • 4-6 chicken legs (drum sticks)
  • 3 medium sized carrots
  • 1 medium sized celeriac
  • 1 leek
  • 1 clove garlic (pressed)
  • 1 tablespoon salt
  • Splash of vinegar
  • Chopped parsley to sprinkle
  • 2 litres water

Method

  1. Pour 2 litres water in large cooking pan, add splash of vinegar
  2. Add chicken legs and boil for 30 minutes
  3. Meanwhile wash and chop all vegetables in small pieces
  4. After 30 minutes take out chicken legs, let cool down
  5. Add chopped veggies and salt to soup and let simmer on low heat
  6. Once cooled, remove meat from chicken bones (beware this can be messy)
  7. Cut meat in small pieces and place chicken meat back in soup
  8. Let soup simmer for another 30 minutes until veggies have softened
  9. Turn heat off and add pressed garlic
  10. Serve sprinkled with parsley
