Porridge with carrot

You might not expect it, but grated carrot in porridge is really delicious. It’s as if you’re having carrot cake for breakfast, and who wouldn’t want that! I love the sweet taste of the oats and the bite of the carrots. Porridge is high in protein and very filling. The carrots give you extra fibre and vitamins!

Ingredients

  • 100 g porridge oats
  • 400 ml water
  • Pinch of salt
  • 100 ml milk or plant-based milk
  • 2 carrots
  • Handful of raisins
  • 1 teaspoon cinnamon
  • Optional: handful of walnuts
  • 2 tablespoons maple syrup (or apple syrup)

Method

  1. Clean the carrots and coarsely grate them, then set aside.
  2. Put the porridge oats in a saucepan, add the water and salt. Bring the porridge to the boil while stirring. Let the porridge simmer gently for 1 minute, stirring continuously. Add a little water if the porridge gets too thick – the texture should be creamy.
  3. Add the almond milk, grated carrot, raisins and cinnamon to the porridge. Stir well and heat for 2 minutes.
  4. Remove the pan from the heat and divide the porridge between 2 bowls. Garnish with the walnuts and maple syrup.
