Minty pea mash with feta

A fresh, summery side dish. Frozen peas are a practical “fast food” vegetable as they require just a few minutes cooking time. Especially children love their slightly sweet taste.
Peas are nutritious little powerhouses. Their many antioxidant and anti-inflammatory compounds can support healthy blood vessels and bone health.

- 300 g peas (frozen)
- 100 g feta cheese
- 1 small onion
- 1 clove garlic (pressed)
- 8 mint leaves
- 2 tablespoons olive oil
- 1 tablespoon butter
Kitchen tools: potato masher
Method
- Wash mint and slice thinly, chop onion
- Fry onions in butter, adding pressed garlic after a few minutes
- Add frozen peas and 100 ml water, cook for 5 minutes
- Add mint and olive oil to loosen mixture
- Mash mixture using a potato masher. Mixture should contain some mashed and whole peas
- Cut feta or crumble on top and drizzle with olive oil
