Roasted fennel

Lots of vegetables develop a great flavour when you roast them. Have you tried roasted fennel? It makes a great side or even main dish if you are a vegetable lover like me. Simply delicious, filling and calming for the stomach.

Fennel is known for its healing properties. It can sooth digestive troubles. It is full of fibre and contains anti-inflammatory oils.

Goes well with: Veggie meatballs , fish dishes

Ingredients

  • 2 fennel bulbs
  • Juice of 1 lemon
  • olive oil to drizzle
  • A few rosemary sprigs
  • salt to taste
  • pepper to taste

Method

  1. Preheat oven to 180 degrees (hot air oven)
  2. Wash fennel and cut in quarters, place in oven dish, drizzle with half of lemon juice, olive oil, salt and pepper, add rosemary sprigs and roast for 25 minutes
  3. Sprinkle with other half of lemon juice and olive oil just before serving
