Pan roasted rosemary cashews

Want to impress guests? Make some pan roasted rosemary cashews. They taste great and are a healthy alternative to potato crisps and other salty, additive loaded supermarket snack foods.

Ingredients

  • 100 g cashew nuts
  • 2 rosemary sprigs
  • salt to taste
  • 1 tablespoon butter or coconut oil

Method

  1. Melt butter or coconut oil in frying pan on medium heat
  2. Remove rosemary needles from sprig by pulling them against growing direction
  3. Fry rosemary needles until slightly crispy
  4. Add cashews and fry until slightly golden, stirring frequently
  5. Add salt just before taking them out of pan, then leave on kitchen paper to cool
