Spinach & feta frittata

Spinach & feta frittata

Frittatas are a great last-minute-throw-together dish. An ideal way to combine nutritious veggies with healthy fats and proteins. They also make very good lunchbox food.

Ingredients

  • 100 g spinach
  • 100 g feta cheese
  • 8 eggs
  • 1 red onion
  • 5 cherry tomatoes
  • 1 clove garlic (pressed)
  • Pinch of salt
  • Pinch of pepper
  • butter for frying

Method

  1. Preheat oven to 200 degrees (hot air oven). Wash spinach and tomatoes. Slice red onion and fry in butter for 2 minutes. Add the spinach and fry for another 2 minutes, set aside.
  2. Chop feta in small squares, combine all ingredients (apart from cherry tomatoes) in large bowl and mix using a fork.
  3. Pour into a medium sized buttered oven dish (or use oven dish lined with baking paper). Cut the cherry tomatoes in half, place on top of egg mixture (sliced side facing up)
  4. Bake for 15-20 minutes, serve hot or cold.
