Mushroom Frittata
Print recipeFrittatas are the Italian version of an omelette baked in the oven. They are a great last-minute-throw-together dish made of vegetables, eggs and leftovers. An ideal way to combine nutritious veggies with healthy fats and proteins. Frittatas are delicious hot or cold and also make very convenient lunchbox food.

- 1 packet mushrooms (about 200 g, any sort)
- 8 eggs
- 2 spring onions
- 1 clove garlic (pressed)
- Pinch of salt
- Pinch of pepper
- 1 handful grated cheese to sprinkle
- butter for frying

Method
- Preheat the oven to 200 degrees (hot air oven), line an oven dish with baking paper
- Clean the mushrooms, wash the spring onions, then chop both into pieces. Fry both in butter for a few minutes, stirring frequently
- Combine all ingredients (apart from the cheese) in a large bowl and whisk together using a fork, pour into medium sized oven dish, sprinkle with cheese and bake for 15-20 minutes
- Serve hot or cold
