Chocolate chip cookies

Chocolate chip cookies

These cookies have a lovely chewy texture and are bursting of chocolate without being too sweet. A welcome treat for visitors and coffee breaks.

Please note that gluten-free baking creates different textures than conventional baking. I use almond meal in this recipe.

Goes well with: tea and coffee, lunch box friendly

Ingredients

  • 200 g almond meal
  • 100 g dark chocolate (min 70%)
  • 50 g soft butter
  • 2 tablespoons honey
  • 1 egg
  • 2 teaspoons vanilla essence
  • Half teaspoon bicarbonate of soda (baking soda)
  • Pinch of salt

Method

  1. Preheat oven to 180 degrees (hot air oven), line baking tray with baking paper
  2. Cut chocolate in small pieces
  3. In a bowl mix almond meal with baking soda, salt and vanilla essence using a fork
  4. Add butter, honey and egg, mix until well combined using a fork
  5. Finally add chocolate pieces and continue mixing
  6. Using a tablespoon scoop 8-10 heaps of batter on baking paper, shape heaps into flat round cookies using a spoon or your fingers
  7. Bake cookies for 15 minutes, leave to cool down as cookies are still fragile when first out, they need to set
