Chocolate chip cookies

These cookies have a lightly crisp outside yet are wonderfully soft on the inside. Treat yourself or someone you love with this delightful bake. For these little treats you use dark chocolate of at least 80%.

Ingredients

  • 200 g gluten-free oat flour (or ground porridge oats)
  • 80 g butter (at room temperature)
  • 3 tablespoons maple syrup
  • pinch of salt
  • 100 g dark chocolate (at least 80% cocoa)

Method

  1. Preheat the oven to 170 degrees and line a baking tray with baking paper.
  2. Place the oat flour, butter, maple syrup and salt in a bowl and mix everything with a fork.
  3. Chop the chocolate into pieces (use a large knife), add to the batter and mix well. Shape eight to ten balls from the batter and place them, using your hands or a spoon, on the baking paper and flatten the balls.
  4. Bake the cookies for 15 minutes and allow to cool. Note: the cookies are soft (and therefore fragile) when they come out of the oven.
