Cauliflower pizza

Everyone loves pizza! In this recipe, I’ve given the dough base a healthy twist by making it with cauliflower, buckwheat and eggs. The base is tasty and light; it’s a bit like flatbread. Top the pizza base with your favourite ingredients!

Ingredients

Bases

  • 1 cauliflower
  • 4 eggs
  • 200 g buckwheat flour
  • 150 g grated cheese
  • 50 ml olive oil
  • 1 teaspoon bicarbonate of soda
  • Juice of 1 lemon
  • 1 teaspoon salt
  • 1 teaspoon turmeric

Topping

  • 100 g salami
  • 8 tablespoons tomato purée
  • Half a courgette
  • 1 pepper
  • 100 g grated cheese

Method

  1. Preheat the oven to 170 degrees and line 2 baking trays with baking paper.
  2. Remove the leaves and the stalk from the cauliflower and cut the cauliflower into pieces. Blitz until fine in the food processor.
  3. Add the remaining ingredients to the food processor and blend until you have a smooth batter. Divide the batter over the 2 baking trays and shape 2 round bases with a spatula.
  4. Bake for 10 minutes; meanwhile, slice the courgette and pepper. Remove the pizza from the oven, spread 4 tablespoons of tomato purée over both pizzas and top with the salami, pepper, courgette and cheese. Bake the pizza for a further 15 minutes.
