Apple-almond cake

Apple-almond cake

This golden brown apple-almond cake is a real autumn treat. Deliciously flavourful and not too sweet. It is gluten-free because I use almond meal instead of wheat flour. And baking time is short because the cake is quite flat.

Ingredients

  • 200 g almond meal
  • 100 g honey
  • 50 g melted butter (+ extra to grease)
  • 2 apples
  • 3 eggs
  • 50 g raisins
  • Juice of 1 lemon
  • 1 tablespoon cinnamon
  • 1 teaspoon vanilla essence
  • 1 teaspoon bicarbonate of soda
  • Pinch of salt
  • 1 tablespoons coconut blossom sugar

Kitchen tools: cake tin (diameter about 22-25 cm), hand-held mixer or whisk, grater

Method

  1. Preheat oven to 170 degrees (hot air oven), grease the cake tin with butter
  2. Wash apples, remove core and grate one, cut the other one in thin slices, set aside
  3. Combine almond meal, raisins, cinnamon, bicarbonate of soda and salt in bowl and mix using a fork. Add grated apple, eggs, melted butter, honey, 1 tablespoon lemon juice and vanilla essence and mix using a hand-held mixer or a whisk
  4. Pour the batter into the cake tin and arrange the apple slices on top (see picture for inspiration). Bake for 30 minutes. Remove from the oven, sprinkle the cake with the remaining lemon juice and coconut blossom sugar
