Easy salade niçoise

Easy salade niçoise

One of the great salad classics! Delicious, nutritious and filling. Packed with fibre, vitamins, protein and healthy fats. I leave out potatoes (less starches and preparation time) but add more eggs and green beans instead.

Ingredients

  • 3 eggs
  • 1 tin tuna ( virgin olive oil)
  • 200 g french beans
  • Handful cherry tomatoes (cut in halves)
  • Large handful salad leaf mixture
  • 10 olives (pitted)
  • 1 red onion (in slices)
  • 1 tablespoon capers
  • salt to taste
  • pepper to taste
  • Optional: small tin anchovies

Method

  1. Bring two pans with water to boil
  2. Wash French beans, cut off bean stems, add beans to one pan and cook them for 8 minutes, drain and set aside
  3. Meanwhile in the other pan boil eggs for 6-8 minutes, allow to cool, peel and chop into quarters
  4. Prepare garlic mayonnaise
  5. Wash salad leaves and spread on two plates. Add French beans, tomatoes, onion slices, tuna and eggs
  6. Top with mayonnaise, capers and olives, add salt and pepper to taste
