Zesty mango & cashew bonbons
Print recipeLooking for a healthy treat? Try these bonbons made from dried mango combined with fresh lemon juice and cashews. The ideal subsitute for conventional sweets. The food processor does all the hard work. You just have to roll them!
Ingredients
- 200 g cashew nuts
- 100 g mango (dried)
- Juice and peel of 1 lemon
- 1 teaspoon vanilla essence
- Pinch of salt
- 50 g desiccated coconut

Method
- Soak dried mangos in water for 2 minutes. Then drain mangos and pulse a few times in the food processor
- Wash lemon, grate peel and juice
- Add cashews, lemon juice, grated peel, vanilla essence and salt to food processor, blend for 2 minutes until a sticky dough has formed
- Roll small balls inbetween your hands (cherry tomato size), this can be sticky!
- Tip: if mixture is too sticky place in the fridge for 5 minutes to set
- Spread desiccated coconut on a plate and roll balls in it
- Store bonbons in fridge for up to 2 weeks
