Avocado lime mousse

- 3 ripe avocados
- juice of 4 limes & 2 teaspoons zest
- 75 ml coconut oil (melted)
- 100 ml maple syrup
Topping
- 100 g pecan nuts
- 25 g desiccated coconut
- 50 g honey
- 100 g raspberries

- grater, baking tray, baking paper
Method
- Cut the avocado into pieces. Place the avocado, lime juice and zest, coconut oil and maple syrup in the blender and blend for 1 minute on a medium setting until smooth. Taste whether the mousse is sweet and sour enough; add extra maple syrup or lime zest if needed. Spoon the mousse into glasses and refrigerate for at least 4 hours.
- Preheat the oven to 160 degrees and line a baking tray with baking paper. Roughly chop the pecan nuts, mix in a bowl with the desiccated coconut and honey. Spread over the baking tray and roast for 10 minutes in the oven. Leave to cool and break into pieces. Garnish the mousse with the crunchy pecan nuts and raspberries.
