Courgette pizza

Courgette pizza

Everyone loves pizza! With this recipe you can easily make a pizza base from courgette, eggs and ground almonds. Top it with a delicious tomato and herb sauce. And then load up that lovely base with your favourite ingredients!

Ingredients

Pizza bases

  • 2 courgettes
  • 1 handful of chives
  • 4 eggs
  • 100 g ground almonds
  • 1 teaspoon turmeric
  • 1/2 teaspoon salt

Sauce

  • 1 onion
  • olive oil for frying
  • 1 clove of garlic (crushed)
  • 1 tin of chopped tomatoes
  • 1 tablespoon oregano
  • pepper to taste
  • salt to taste

Topping

  • 150 g grated cheese
  • 2 handfuls of spinach
  • 1 handful of fresh basil

  • grater, baking paper

Method

  1. Preheat the oven to 200 degrees and line two baking trays with baking paper.
  2. For the pizza bases, coarsely grate the courgettes and finely chop the chives. Mix the courgette with a fork in a bowl with the eggs, ground almonds, chives, turmeric and salt. Divide the courgette mixture over the two baking trays.
  3. Using the back of a tablespoon, shape into a pizza base. Place the baking trays in the oven and bake for 15 minutes.
  4. Meanwhile, make the tomato sauce. Finely chop the onion, heat olive oil in a pan and sauté the onion and garlic.
  5. Add the chopped tomatoes, oregano, salt and pepper and simmer for 5 minutes.
  6. Remove the bases from the oven and spread the tomato sauce over them. Top with cheese or a topping of your choice and bake for another 10 minutes until the pizza base is golden brown at the edges and the cheese has melted.
  7. Remove from the oven and garnish with spinach and basil.
