Cauliflower mash

Cauliflower mash

Think cauliflower is boring? Mashed up with a few added ingredients it becomes a deliciously creamy side dish. Not only a great alternative to potato mash, but it also doesn’t cause a sudden spike in blood sugar levels. Cauliflower is known for its many health benefits, rich in antioxidants and anti-inflammatory compounds.

Goes well with: meat dishes, Veggie meatballs, Roasted salmon with green asparagus

Ingredients

  • 1 medium sized cauliflower
  • 100 g grated cheese
  • 2 tablespoons butter
  • 1 clove of garlic (pressed)
  • Half teaspoon salt
  • Pinch of pepper
  • 1 small handful chopped chives

Kitchen tools: food processor or potato masher

Method

  1. Cut off cauliflower stem and leafs, wash cauliflower and chives
  2. Place cauliflower in large cooking pan, bring to boil, then reduce heat and let simmer for about 20 minutes
  3. Drain cauliflower and blend with butter, cheese, pressed garlic, salt and pepper (alternatively use potato masher)
  4. Add chives, shortly blend or mash again
